Mexican Wedding Cookies
My mom makes these for us every Christmas, so I was ecstatic when they were given to us the first week of orientation. Below is the recipe we received from Dona Lupita, our lovely cook. It's in Spanish primarily and then I'll try to translate it for you.
Galletas de Nuez
2 barritas de mantequilla
12 cucharadas de azucar glass
2 tazas de nuez molido
2 tazas de harina
2 cucharadas de vainilla
Son para 38 piezas
Se reveulve todo y se hace las volitas
Tiempo de horneho 15 minutos
Temperatura 150 grados
Walnut Cookies
2 sticks of butter
12 tablespoons of powdered sugar (a little less than a cup)
2 cups of ground walnuts
2 cups of flour
2 teaspoons of vanilla extract
Recipe makes 38 cookies
Mix everything together and make little balls
Cook for 15 minutes
Oven temperature 350F
